
Fall is here and Maple always tastes so good in the fall. I guess because of all the warm oatmeal and pancake breakfasts. Plus it's rich, sweet, warm, earthy flavor just seems right in Fall.
We have a small sugarhouse not far from here and I remember touring it when I was young. It was neat to watch the process, from taking a drink of the sap straight from the tree, to having a warm cube of maple sugar. Good memories!

The USDA has a five-tier grading systems. The Coombs Family Farm adds two tiers to offer seven grades of maple syrup. I also learned that the grades have nothing to do with quality and everything to do with color.
