I remember the first time I saw a Bumbo, it was in a restaurant several years ago. I thought it was such a neat product, I actually stopped at the table to ask them where they purchased it. Of course it was given to them as a gift and they had no idea. So, I kept my eyes open for them. By the time I found them, all the little ones in the family were past this stage.

Meet Mrs. Katz, devoted mom of 5, and the dynamic force behind Katz Gluten Free. For fifteen years, Mrs. Katz endured a constant and grueling battle with fatigue, headaches and indigestion. Physicians, nutritionists and alternative health practitioners were baffled by her condition, which was originally diagnosed as ‘Chronic Fatigue Syndrome’, with no apparent cure. Every day presented a new challenge for Mrs. Katz, as she struggled to maintain a healthy lifestyle for herself and her family. As the years progressed, Mrs. Katz’s condition steadily declined and she began developing rheumatoid arthritis. Determined to live a normal life again, she was desperate to find a cure.

And then it happened. It was during a random visit to the supermarket when she came upon an acquaintance who innocently mentioned the words ‘celiac disease’. Enthusiastic, curious, and extremely hopeful, she rushed home and immediately set upon researching this disease. As she researched more and more, her ailments seemed increasingly similar to the common celiac symptoms. She scheduled an appointment with her doctor who, upon thorough testing, confirmed her diagnosis. Based upon her research, she learned that two of her children also suffered from Celiac Disease, an inherited autoimmune disorder that affects the digestive process of the small intstine. At long last there was a name and potential cure for her suffering. I am sure you all remember that initial sensation - that apprehensive and deciding moment of diagnosis; knowing that the road ahead is strewn with difficulties and sacrifices, but full of resolve to do whatever it takes in an attempt to once again lead a perfectly healthy life. Mrs. Katz knew that from now on, she would have to carefully read the labels on every food item that entered her home, and totally transform her cooking habits. It would be far from easy. But like a newly assigned soldier eager to tackle his first mission, Mrs. Katz conscientiously accepted her new dietary responsibilities. Always the culinary connoisseur, she set about her mission of devising recipes and techniques to ensure that her gluten-free diet would maintain the benchmark taste and flavor her family had become accustomed to.

The ensuing months were a culinary adventure in the Katz household; with new recipes created on a weekly basis. And slowly, word spread throughout the community. Calls started coming from friends and family members who knew someone who knew someone who was gluten intolerant. Introducing ~ Capri Ann Wilson-Vickers

Tuesday, August 10th @ 3:23 PM we welcomed our first daughter, Capri Ann into the world. She arrived two weeks post due date and I was induced ~ she really liked her little place in the womb!

Labor and delivery were intense but fairly quick ~ birth story to follow.

So now I'm adjusting to life with Capri. It really is an adjustment, but I'm quite enjoying getting to know this sweet little person who makes my heart melt.

Revamping the Bedroom with Overstock.com

With a new addition to the family, that means shifting things around a bit. Julien will be transitioning into a big bed away from Mom & Dad. So in the new setup, we will be revamping our bedroom. Freshen it up - give it a new life.


We're looking into the Furniture Stores at Overstock.com . There is such a huge selection of all the latest designs.



We found these 1000 count Egyptian Cotton Sheets that are lovely - I'm a sheet snob and these look wonderful! And the prices are great!






We're even talking about a whole new Bedroom Furniture set and at this price for a 5 piece set, it might be totally do-able. I want something modern and clean like this set below.



And their Area Rugs - I'm in love with this one! The colors are perfect. I'm into chocolate and nice natural tones with bursts of bold colors- preferably reds.



So I'm seeing it all come together and it's exciting. I recently revamped the kitchen and I find myself in the kitchen a lot more now - I just want to be in there. It feels fresh and the lighting is great. I can't wait to do the same for the bedroom - it will be even more my sanctuary than it already is.

One more thing I stopped to check out was the Kids Furniture. Ju needs a proper full size bed. We like this one - I say drawers for jammies - he says drawers for toys!

I have never owned a griddle before. I think of it as a breakfast making tool - you know pancakes, bacon, eggs - and I am not a that kind of breakfast girl. Every once in awhile a big breakfast like that tastes good, but normally it's just too much. So I never really thought I needed a griddle and have never gotten one.

I am loving it and haven't made a single breakfast yet! The first thing I made were perfect grilled cheese to go with my tomato soup - yummo. The were perfectly melted, and toasted and quick. Then I did some really nice quesadillas for lunch - again, so yummy and perfectly melted with just the right amount of crisping on the outside. And then last night, I took all the veggies out of the fridge and did a stir fry as a way to clean out the fridge before I go shopping. It was sooo good & quick.

The thing I really appreciate about this griddle, is the temp control you have. The probe allows you to change the temp easily and it changes quickly - if you want it cooler - it goes cooler. Then the hot zone stays hotter for that finishing sear or crispness. I love it!

Optimize the immune system
Reap the benefits of probiotics like those found in yogurt. A recent study showed that children who received enough probiotics daily throughout the cold and flu season had a significant reduction in the number of illnesses they had and, when they did get sick, the symptoms were both milder and didn't last as long.

Be sure your child is getting plenty of vitamin D from the sun, from food, or from a supplement.

Build a strong foundation. Good food, good sleep, and good physical activity all help the immune system to flourish.
Be wise about reducing unnecessary exposure to harmful germs
Teach children the key times to clean their hands in the classroom. The most important times include after sneezing, coughing or using the restroom, upon leaving "high-risk" places (recess, naptime, play stations) and before meals or snacks.

Sixty percent of teachers surveyed said that they request that parents donate disinfecting wipes to the classroom. Seventh Generation’s disinfecting wipes kill 99.99% of germs* naturally using the active ingredient thyme, a component of thyme oil which is derived from the herb thyme.

Stress the importance of not touching their eyes, nose or mouth. Germs are often spread when a person touches something that is contaminated with germs and then touches his or her eyes, nose, or mouth.
